Don't drink when eating carrots, otherwise β- Carotene promotes oxidation in the body

Excessive alcohol consumption is known to increase oxidative stress levels in the body. Numerous studies have shown that drinking too much results in an accumulation of free radicals and lipid peroxidation, which can contribute to the development of alcoholic liver disease. Interestingly, some research suggests that consuming carrots while drinking may have a protective effect due to the presence of beta-carotene, a potent antioxidant. However, studies have also suggested that beta-carotene may potentially act as a pro-oxidant under certain conditions. Overall, it is clear that excessive alcohol consumption can lead to oxidative stress and related health issues, and moderation and a balanced diet are key to maintaining optimal health.

 

A recent study conducted in Taiwan focused on investigating the effects of carotene on the total antioxidant state in mice. Interestingly, the study examined the impact of simultaneous drinking and eating on this process. The findings revealed that rats receiving carotene supplements exhibited significantly higher concentrations of glutathione (GSH) in their livers compared to those in the simple drinking group. Notably, the presence of carotene was found to assist in reducing the inhibition of glutathione peroxidase (GPX) caused by certain peroxides, resulting in an improvement in overall antioxidant capacity. Importantly, no evidence was observed suggesting an increase in oxidation. These results highlight the potential benefits of carotene intake and its ability to enhance antioxidant defense mechanisms in the body.
